Here is her simple and perfect for summer Thunder Cake Recipe Challenge Winning recipe:
Cucumber and Mint Popsicles

4 cucumbers

2 sprigs of fresh mint

1 squeeze of fresh lime juice

3 TBS. honey

Directions: Mix cucumbers in a blender/food processor. Strain pureed cucumbers through a strainer. Mince 6-8 mint leaves and blend with strained cucumber “juice.” Add a squeeze of lime juice & honey. Place a mint leaf in each popsicle if desired. Pour in popsicle molds and freeze for 6+ hours.

Why the is recipe is a winner: Kathleen says these popsicles are easy to make with your kids because there are only a few ingredients. You can blend up the ingredients in a food processor but your kids might have just as much fun pulverizing the ingredients with their hands and a fork! Four cucumbers spread across 4-8 popsicles (depending on the size) definitely gives you 1/2 to more than a serving of veggies. The ingredients in all four recipes are natural (real honey versus sugar substitutes) and will give your kids more nutritional value than a fruit juice popsicle sweetened with splenda and laden with chemicals, dyes and fillers. Cucumbers are a tasty way to keep your kids hydrated in the summer and are a good source of vitamin K, one of the shortfall nutrients kids in the U.S. don’t get enough of. Mint is an herb with gastrointestinal health benefits too.

Strawberry Shortcake

6 cups fresh or frozen strawberries

3 cups organic vanilla full-fat yogurt, Greek (or buy plain and add some honey & vanilla)

1 cup macadamia nuts, chopped

Directions: Mix strawberries in a blender/food processor. Layer yogurt and pureed strawberries in popsicle molds and freeze for 6+ hours. Remove from molds and roll in macadamia nuts.

Peach Lavender

10 peaches

2 TBS. honey (more if your peaches aren’t that sweet)

4 sprigs of fresh lavender

Directions: Mix peaches and honey in a blender/food processor. Add the leaves from the sprigs of lavender & stir with a spoon. Pour into popsicle molds or cups and freeze for 6+ hours.

Orange Rosemary

6 fresh oranges

3 sprigs of fresh rosemary

Directions: Juice the oranges. Add the leaves from the sprigs of rosemary and pour in popsicle molds and freeze for 6+ hours.
